Ingredients

  • 6 oz. butter or margarine
  • 1 1/4 c. sugar
  • 2 eggs
  • 1/2 c. milk
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 c. lemon juice
  • 1/2 c. chopped nuts
  • grated rind of 1 lemon

Method

  • Cream butter, 1 cup sugar and eggs.
  • Beat until light and fluffy.
  • Add milk alternately with flour that has been blended with baking powder.
  • Mix well.
  • Add lemon rind and nuts.
  • Bake in 8 1/2 x 4 x 2-inch loaf pan at 350° for 1 hour.
  • Remove from oven. Combine lemon juice with 1/4 cup sugar; pour over hot bread.
  • Let stand until cool before removing from pan.
