Ingredients

  • 1 whole or thick filet (fresh from supermarket)
  • 1/2 c. butter or 1 stick margarine
  • 1/2 c. lemon juice or 1 whole lemon
  • 1 1/2 c. crushed saltine crackers (salted or unsalted)

Method

  • Preheat oven to 375°.
  • Rinse fish under running water.
  • Pat dry with paper towel.
  • Place fish into buttered baking pan or dish.
  • Sprinkle lightly with salt to taste if desired.
  • Cook in oven about 15 minutes until fork inserts easily.
  • Remove from oven.
  • Cover with and layer around with cracker crumbs.
  • Dot with butter and sprinkle lemon juice over all.
  • Place back in oven and cook until cracker crumbs are lightly browned (about 10 minutes). Do not overbrown.
  • May serve 4 to 6.
