Ingredients
- 1 whole or thick filet (fresh from supermarket)
- 1/2 c. butter or 1 stick margarine
- 1/2 c. lemon juice or 1 whole lemon
- 1 1/2 c. crushed saltine crackers (salted or unsalted)
Method
- Preheat oven to 375°.
- Rinse fish under running water.
- Pat dry with paper towel.
- Place fish into buttered baking pan or dish.
- Sprinkle lightly with salt to taste if desired.
- Cook in oven about 15 minutes until fork inserts easily.
- Remove from oven.
- Cover with and layer around with cracker crumbs.
- Dot with butter and sprinkle lemon juice over all.
- Place back in oven and cook until cracker crumbs are lightly browned (about 10 minutes). Do not overbrown.
- May serve 4 to 6.
