Ingredients

  • 1 cup french green lentil, rinsed and picked over
  • 3 cups water
  • 14 teaspoon baking soda
  • 1 12 lbs garlic sausages
  • 2 teaspoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 5 tablespoons extra-virgin olive oil
  • 12 cup walnuts, toasted and chopped
  • 14 cup chopped fresh parsley
  • salt and pepper

Method

  • Place the lentils, water and baking soda in a microwave-safe bowl.
  • Cover and microwave until the lentils are soft, about 20 minutes.
  • Drain, then rinse under cold water.
  • Meanwhile, grill the sausages over medium fire, turning frequently, until browned on all sides and cooked through, about 7-9 minutes.
  • Whisk the mustard, vinegar and olive oil together in a bowl.
  • Toss the lentils, walnuts and parsley with the dressing and season with salt and pepper to taste.
  • Serve the grilled sausages over the salad.
