- 1 cup french green lentil, rinsed and picked over
- 3 cups water
- 14 teaspoon baking soda
- 1 12 lbs garlic sausages
- 2 teaspoons Dijon mustard
- 2 tablespoons red wine vinegar
- 5 tablespoons extra-virgin olive oil
- 12 cup walnuts, toasted and chopped
- 14 cup chopped fresh parsley
- salt and pepper
Method
- Place the lentils, water and baking soda in a microwave-safe bowl.
- Cover and microwave until the lentils are soft, about 20 minutes.
- Drain, then rinse under cold water.
- Meanwhile, grill the sausages over medium fire, turning frequently, until browned on all sides and cooked through, about 7-9 minutes.
- Whisk the mustard, vinegar and olive oil together in a bowl.
- Toss the lentils, walnuts and parsley with the dressing and season with salt and pepper to taste.
- Serve the grilled sausages over the salad.
