Ingredients
- 1/2 stick margarine
- 3 large eggs
- grated rind of 1 large lemon
- juice of lemon (scant 1/4 c.)
- 1 1/2 c. sugar
- 1/4 tsp. salt
- 1 Tbsp. cornmeal
Method
- Soften margarine and cream with sugar.
- (Mix this pie by hand.)
- Add eggs, one at a time.
- (Do not beat; stir in.) Add lemon juice, grated rind, salt and cornmeal.
- Mix well and pour into unbaked pie shell.
- Cook for 30 minutes or until set at 350°.
