Ingredients
- pre-baked pie crust
- 3 eggs
- 1 1/2 c. sugar
- 2 Tbsp. flour
- dash salt
- 2 Tbsp. butter or margarine, melted
- 1 c. buttermilk (or 1 Tbsp. lemon juice or vinegar + enough milk to make 1 c.)
- 1 to 1 1/2 tsp. lemon flavoring (flavor to taste)
- powdered sugar
Method
- Beat eggs, sugar, flour and salt until completely blended.
- Add butter and buttermilk.
- Add lemon flavoring.
- Blend and pour into pie crust.
- Sprinkle with powdered sugar.
- Bake at 325° until done.
