Ingredients
- pumpkin to give 4 lb., cubed
- 4 lb. sugar
- 3 lemons
- 1 orange
Method
- Peel pumpkin and cut in small cubes, discarding seeds and inner pulp.
- Add sugar and let stand overnight.
- Put lemons and orange through food grinder, discarding seeds, but reserving all juice.
- Add to pumpkin.
- Stir over low heat until boiling.
- Simmer until thick and clear, about 3 hours.
- Stir frequently to prevent scorching.
- Pack in hot sterilized jars and process.
- Makes about 4 pints.
