Ingredients
- 1 frying chicken (cut into serving pieces)
- 2 Tbsp. oil or melted margarine
- 3 Tbsp. fresh lemon juice
- 1 clove-garlic (crushed)
- 1/2 tsp. salt
- dash pepper
Method
- Preheat oven to 350°.
- In a medium bowl, combine lemon juice, oil or butter, garlic, salt, and pepper.
- Arrange chicken in a shallow casserole or baking dish.
- Pour lemon and oil mixture over chicken.
- Cover and bake until tender (approximately 40 minutes), basting occasionally.
- Uncover casserole dish and bake 10 minutes longer to allow chicken to brown.
- To serve, sprinkle with chopped parsley (optional).
