Ingredients

  • 1 frying chicken (cut into serving pieces)
  • 2 Tbsp. oil or melted margarine
  • 3 Tbsp. fresh lemon juice
  • 1 clove-garlic (crushed)
  • 1/2 tsp. salt
  • dash pepper

Method

  • Preheat oven to 350°.
  • In a medium bowl, combine lemon juice, oil or butter, garlic, salt, and pepper.
  • Arrange chicken in a shallow casserole or baking dish.
  • Pour lemon and oil mixture over chicken.
  • Cover and bake until tender (approximately 40 minutes), basting occasionally.
  • Uncover casserole dish and bake 10 minutes longer to allow chicken to brown.
  • To serve, sprinkle with chopped parsley (optional).
