Ingredients

  • 1 c. shortening
  • 1 c. sugar
  • 1 c. firmly packed brown sugar
  • 2 large eggs
  • 2 c. flour (or use self-rising minus soda, salt and powder)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 2 c. uncooked oats
  • 2 c. Rice Krispies cereal
  • 1 c. flaked coconut

Method

  • Beat shortening and sugar at medium speed until creamed; add eggs and vanilla, beating well.
  • Combine flour and other ingredients (if you are not using self-rising flour) to shortening mixture, mixing well.
  • Stir in oats and cereal by hand (not mixer). Shape into 1-inch balls and place 2 inches apart on cookie sheet. Flatten with fork.
  • Bake at 350° for 15 or 20 minutes.
