Ingredients

  • 2 c. all-purpose flour
  • 1/4 tsp. salt
  • 1 tsp. baking soda
  • 1/2 c. dark brown sugar, packed
  • 1/2 c. white sugar
  • 3/4 c. salted butter, softened
  • 1 large egg
  • 2 tsp. pure vanilla extract
  • 1 c. crispy rice cereal
  • 1 1/2 c. (6 oz.) coarsely chopped crispy rice chocolate bars

Method

  • Preheat oven to 300°.
  • In a medium bowl, combine flour, salt and soda.
  • Mix well with a wire whisk and set aside.
  • In a large bowl, blend sugars with an electric mixer at medium speed.
  • Add butter and mix to form a grainy paste.
  • Add egg and vanilla.
  • Beat at medium speed until fully combined.
  • Add flour mixture, rice cereal and chocolate chunks.
  • Blend at low speed until combined. Do not overmix.
  • Drop by rounded tablespoonfuls onto ungreased cookie sheets 2 inches apart.
  • Bake for 18 to 20 minutes. Immediately transfer cookies to a cool, flat surface.
