Ingredients
- 1/2 whole Onion (cut Into Slices Or Chopped)
- 1/2 whole Green Pepper (cut Into Slices Or Chopped)
- 1/2 whole Red Pepper (cut Into Slices Or Chopped)
- 1 cup Mushrooms, Roughly Chopped
- 4 cups Spinach (roughly Chopped)
- 2 whole Zucchinis, Sliced Into Rounds
- 1 dash Spices Of Your Preference
- 1/2 cups Shredded Cheese
- 1/2 cups Salsa
Method
- Note: These are the ingredients I used because they are what I had on hand.
- But feel free to mix them up and add any seasonings you prefer.
- 1.
- Put a medium to large-sized skillet on the stove and spray with Pam or throw in a dash of olive oil.
- Turn the heat on medium-low.

- I added vegetables as I finished chopping them.
- First I cut my onion into strips and threw them into the skillet.
- I added the peppers next followed by the zucchini.
- The mushrooms were the next vegetable added.
- Because my skillet was too small I had to saute my spinach in a separate skillet, but it would work well in just one skillet.

- While vegetables are sauteing, throw in some spices.
- I added a dash of seasoned salt, Old Bay, cayenne pepper and Italian seasonings.
- Feel free to add anything youd like!

- When onions and peppers are soft and the zucchinis are clear in their centers, throw on some grated cheese.
- I did a taco mix because thats all I had but anything would work.
- Let melt for a couple mintes.
- 5.
- Transfer to plate and add salsa to taste.
- Enjoy!
