Ingredients
- 1 large chicken, boiled and boned
- 1 can cream of mushroom soup
- 1 can Ro-Tel tomatoes
- 2 large onions, chopped
- 12 corn tortillas
- 3/4 lb. grated cheese
- 1 can chicken broth
Method
- Mix chicken broth and Ro-Tel.
- Tear tortillas into small pieces and line a large baking dish with half of them.
- Layer soup mixture, chicken, cheese, remaining tortilla pieces and onion. Top last layer with cheese.
- Bake at 350° for 1 hour.
- Makes 8 to 10 servings.
- Also freezes well.
