Ingredients
- -1 lb Polish Kielbasa (sliced 1/4 inch rounds)
- -3 med yukon gold potatos (peeled and sliced approx 1/4" thick x 1" diameter)
- -1 lb fresh baby spinach (prewashed & dried)10 oz pkg of frozen spinach (thawed) can be substituted
- -3or4 med cloves garlic (finely chopped)
- -4 cups water
Method
- -pan fry polish kielbasa over med-high heat in 10" saucepan until sausage blackens-turning sausages to cook both sides (10-15 min total)the blackened pan bottom makes the broth.
- -add chopped garlic and saute 15 seconds
- -add spinach and saute until wilted
- -add 4 cups water and stir- loosening browned coating on pan bottom
- -add sliced potatos and bring to boil.
- -reduce heat and simmer 25 min or until potatos are tender.
