Ingredients
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. sugar
- 1/2 c. shortening
- 1 egg yolk
- 4 Tbsp. ice water
- about 6 large peaches, cut in eighths (skin on)
- 1/2 to 2/3 c. sugar
- 1/8 tsp. cinnamon
- 1/2 c. sour cream
- 2 Tbsp. flour
Method
- Preheat oven to 425°.
- Prepare sweet pastry by sifting dry ingredients (flour, baking powder, salt and sugar) together.
- Cut in shortening.
- Add beaten egg yolk, then ice water.
- Roll out 1/8 inch thick.
- Place in a large, 10-inch, deep pie pan.
