Ingredients

  • 6 to 8 flounder fillets
  • 2 medium onions
  • 2 large tomatoes
  • 6 to 7 medium mushrooms
  • 1/4 c. white wine
  • 8 oz. Mozzarella (small)
  • Parmesan cheese, grated
  • 1/4 c. bread crumbs
  • 1/4 stick margarine

Method

  • Grease a medium cookie sheet with margarine.
  • Lay flounder fillets to cover.
  • Dice onions and tomatoes and evenly cover fillets on cookie sheet.
  • Slice mushrooms; cover fillets.
  • Add wine; cover fillets.
  • Dice Mozzarella; cover fillets.
  • Sprinkle Parmesan cheese over top to taste.
  • Sprinkle bread crumbs.
  • Broil until the top browns, about 5 to 7 minutes.
  • Slice like "Sicilian pizza" and serve!
