Ingredients
- 1 (6 oz.) pkg. Junior Mints
- 1 (3 oz.) pkg. cream cheese, softened
- 2/3 c. sugar
- 3 eggs
- 1 tsp. vanilla
- graham cracker crust or chocolate
- 9-inch crumb crust (in spring-form pan)
Method
- Place mints in freezer.
- Preheat oven to 350°.
- With electric mixer, beat the cream cheese and sugar until smooth.
- Add eggs, one at a time, beating well after each addition.
- Stir in vanilla. Pour into crust.
- Chop mints; sprinkle onto cheesecake.
- Bake for 40 to 45 minutes, or until just set.
- Cool on wire rack, then chill several hours or overnight.
- Makes 8 servings.
