Ingredients

  • 1 (6 oz.) pkg. Junior Mints
  • 1 (3 oz.) pkg. cream cheese, softened
  • 2/3 c. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • graham cracker crust or chocolate
  • 9-inch crumb crust (in spring-form pan)

Method

  • Place mints in freezer.
  • Preheat oven to 350°.
  • With electric mixer, beat the cream cheese and sugar until smooth.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in vanilla. Pour into crust.
  • Chop mints; sprinkle onto cheesecake.
  • Bake for 40 to 45 minutes, or until just set.
  • Cool on wire rack, then chill several hours or overnight.
  • Makes 8 servings.
