Ingredients

  • 3 or more slices bacon
  • 1 (17 oz.) can black-eyed peas
  • 1 (16 oz.) can whole tomatoes, chopped
  • 1 c. chopped onion
  • 1 large green pepper, chopped
  • 1 minced garlic clove
  • 1 tsp. ground cumin
  • 1 tsp. dry mustard
  • 1/2 tsp. curry powder
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • chopped fresh parsley

Method

  • Cook bacon until crisp.
  • Remove and crumble; save.
  • Stir remaining ingredients into bacon grease in skillet and cook. Bring to a boil.
  • Reduce heat and simmer 20 minutes, stirring occasionally.
  • Pour mixture into serving dish.
  • Sprinkle bacon and parsley over.
  • Serve over rice.
