- 3 or more slices bacon
- 1 (17 oz.) can black-eyed peas
- 1 (16 oz.) can whole tomatoes, chopped
- 1 c. chopped onion
- 1 large green pepper, chopped
- 1 minced garlic clove
- 1 tsp. ground cumin
- 1 tsp. dry mustard
- 1/2 tsp. curry powder
- 1/2 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. pepper
- chopped fresh parsley
Method
- Cook bacon until crisp.
- Remove and crumble; save.
- Stir remaining ingredients into bacon grease in skillet and cook. Bring to a boil.
- Reduce heat and simmer 20 minutes, stirring occasionally.
- Pour mixture into serving dish.
- Sprinkle bacon and parsley over.
- Serve over rice.
