Ingredients

  • 1/2 c. honey
  • 1/4 c. butter
  • 1/4 c. oil
  • 1 egg
  • 1 c. persimmon pulp
  • 1 tsp. baking soda
  • 1 c. chopped nuts
  • 1 c. raisins
  • 1/2 tsp. salt
  • 2 c. whole wheat flour
  • 1 tsp. cinnamon
  • 1/4 tsp. each nutmeg and powdered cloves

Method

  • Preheat oven to 350°.
  • Cream together honey, butter and oil. Beat
  • egg
  • lightly and
  • add.
  • Prepare persimmon pulp by cutting persimmon
  • in
  • half.
  • Scoop out the pulp, removing any seeds, and break up the fruit with your fingertips.
  • Dissolve baking soda
  • in pulp.
  • Combine
  • persimmon with honey mixture. Stir nuts,
  • raisins and salt into flour.
  • Add cinnamon, nutmeg and cloves.
  • Stir
  • dry ingredients
  • into
  • wet
  • ones.
  • Drop by heaping teaspoons
  • onto oiled cookie sheets.
  • Bake 20 minutes. Makes 3 dozen.
