- 4 oz. sliced bacon, cut into squares
- 1/2 c. chopped onion
- 2 medium green peppers, cut in 1/2-inch strips
- 1 c. uncooked long-grain rice
- 2 cloves garlic, minced
- 2 c. canned tomatoes
- 1/2 tsp. dried thyme
- 1 tsp. salt
- freshly ground Creole pepper
- approximately 1 qt. chicken broth
- 8 oz. smoked ham, cut in strips
- 1 lb. medium, raw shrimp, deveined
- freshly chopped parsley
Method
- Preheat oven to 350°.
- In a 4-quart pot, fry bacon until brown, but not crisp.
- Remove bacon from drippings, drain and reserve.
