Ingredients

  • 4 oz. sliced bacon, cut into squares
  • 1/2 c. chopped onion
  • 2 medium green peppers, cut in 1/2-inch strips
  • 1 c. uncooked long-grain rice
  • 2 cloves garlic, minced
  • 2 c. canned tomatoes
  • 1/2 tsp. dried thyme
  • 1 tsp. salt
  • freshly ground Creole pepper
  • approximately 1 qt. chicken broth
  • 8 oz. smoked ham, cut in strips
  • 1 lb. medium, raw shrimp, deveined
  • freshly chopped parsley

Method

  • Preheat oven to 350°.
  • In a 4-quart pot, fry bacon until brown, but not crisp.
  • Remove bacon from drippings, drain and reserve.
