Ingredients
- 6 diced potatoes
- 1/2 c. olive oil
- 1 1/2 c. vinegar
- 1 c. diced tomatoes
- 1/2 c. chopped black olives
- 3 Tbsp. parsley flakes
- 1 Tbsp. oregano
- 1/2 c. finely chopped onion
Method
- Soak onion, oregano, parsley and tomatoes in olive oil and vinegar while cooking potatoes.
- Cook potatoes until tender; let cool.
- Pour mixture over potatoes; toss well.
- Salt and pepper to taste.
