Ingredients

  • 1 cooked, boned chicken
  • 4 c. cooked quick rice
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 to 1 1/2 c. chicken broth
  • 3 Tbsp. chives
  • 1 c. mushrooms
  • 1/2 c. grated Cheddar cheese
  • 1 small jar pimentos

Method

  • Combine soups and broth; boil.
  • Remove from heat and add chives, mushrooms and cheese, stirring until cheese melts.
  • Spoon 1/2 rice into dish, top with 1/2 chicken and pour 1/2 sauce over it.
  • Repeat steps.
  • Top with pimentos.
  • Bake at 350° for 30 minutes.
  • Cover with foil while baking.
