- 1 cooked, boned chicken
- 4 c. cooked quick rice
- 1 can cream of celery soup
- 1 can cream of mushroom soup
- 1 to 1 1/2 c. chicken broth
- 3 Tbsp. chives
- 1 c. mushrooms
- 1/2 c. grated Cheddar cheese
- 1 small jar pimentos
Method
- Combine soups and broth; boil.
- Remove from heat and add chives, mushrooms and cheese, stirring until cheese melts.
- Spoon 1/2 rice into dish, top with 1/2 chicken and pour 1/2 sauce over it.
- Repeat steps.
- Top with pimentos.
- Bake at 350° for 30 minutes.
- Cover with foil while baking.
