Ingredients
- 1 1/2 tablespoons oil
- 1 red capsicum, cut into 2cm pieces
- 1 green capsicum, cut into 2cm pieces
- 1 yellow capsicum, cut into 2cm pieces
- 300g orrechiette pasta, cooked and drained
- 1 x 280g jar artichoke hearts, drained and halved
- 1/2 cup flat leaf parsley, coarsley chopped
- 1/2 cup KRAFT Italian Dressing
- flaked Parmesan cheese, to serve
Method
- TOSS the oil throught the capsicums and chargrill over a high heat for 3-5 minutes, or until just tender.
- Cool
- COMBINE the pasta with capsicums, artichokes, parsley and dressing.
- Transfer to a serving bowl and sprinkle over Parmesan.
- Serve immediately.
