Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 155 g (5 1/2 oz/1 cup) sliced ham, chopped
  • 6 eggs
  • 3 tablespoons milk
  • 350 g (12 oz/2 cups) cooked fusilli or spiral pasta 
  • 25 g (1 oz/1/4 cup) grated parmesan cheese
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped basil
  • 60 g (2 1/4 oz/1/2 cup) grated cheddar cheese

Method

1. Heat half the oil in a frying pan. Add the onion and stir over low heat until tender. Add the ham and stir for 1 minute. Transfer to a plate.

2. Whisk together the eggs and milk and season. Stir in the pasta, parmesan, herbs and onion mixture.

3. Preheat the grill (broiler) to hot. Heat the remaining oil in the same pan. Pour the egg mixture into the pan. Sprinkle with the cheddar cheese. Cook over medium heat until the omelette begins to set around the edges then place under the grill until lightly browned on top. Cut into wedges for serving.
