Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 lb. pork sausage
  • 3/4 c. oats
  • 1/2 c. tomato sauce
  • 1 egg, beaten
  • 1 1/2 tsp. salt (optional)
  • 1/2 tsp. pepper
  • 2 tsp. oregano
  • 1/2 c. Parmesan cheese
  • 10 oz. pkg. frozen chopped spinach, cooked and drained
  • 2 (16 oz.) cans baby tomatoes, drained and sliced
  • 12 oz. grated Mozzarella cheese

Method

  • Combine meats, oats, tomato sauce, egg, seasonings and 1/2 of the Parmesan cheese.
  • Pack into bottom and halfway up the sides of an ungreased 13 x 9-inch baking pan.
  • Bake at 350° for 25 minutes; drain fat.
  • Top meat with spinach.
  • Arrange tomatoes over spinach. Sprinkle with remaining Parmesan cheese.
  • Top with Mozzarella. Bake at 350° for 15 minutes more or until cheese is golden brown and bubbly.
  • Yields approximately 10 servings.
