- 1 1/2 lb. ground beef
- 1/2 lb. pork sausage
- 3/4 c. oats
- 1/2 c. tomato sauce
- 1 egg, beaten
- 1 1/2 tsp. salt (optional)
- 1/2 tsp. pepper
- 2 tsp. oregano
- 1/2 c. Parmesan cheese
- 10 oz. pkg. frozen chopped spinach, cooked and drained
- 2 (16 oz.) cans baby tomatoes, drained and sliced
- 12 oz. grated Mozzarella cheese
Method
- Combine meats, oats, tomato sauce, egg, seasonings and 1/2 of the Parmesan cheese.
- Pack into bottom and halfway up the sides of an ungreased 13 x 9-inch baking pan.
- Bake at 350° for 25 minutes; drain fat.
- Top meat with spinach.
- Arrange tomatoes over spinach. Sprinkle with remaining Parmesan cheese.
- Top with Mozzarella. Bake at 350° for 15 minutes more or until cheese is golden brown and bubbly.
- Yields approximately 10 servings.
