Ingredients

  • 1 pkg. chopped spinach, well drained
  • 1/2 c. milk
  • 1/2 c. chicken broth
  • 1/2 c. chopped onion
  • 2 garlic cloves, chopped
  • 2 Tbsp. butter
  • 1/3 c. Parmesan cheese
  • 1/2 tsp. pepper
  • 1 pkg. linguine, cooked

Method

  • Place milk, broth and spinach in food processor. Blend until well mixed and smooth.
  • Saute garlic and onion in butter in skillet 2 to 3 minutes. Add spinach mixture. Cook over low heat 5 minutes, stirring occasionally. Add cheese and pepper, stirring until thickened.
  • Pour spinach mixture over linguine and mix. Makes 6 servings.
