Ingredients
- 1 pkg. chopped spinach, well drained
- 1/2 c. milk
- 1/2 c. chicken broth
- 1/2 c. chopped onion
- 2 garlic cloves, chopped
- 2 Tbsp. butter
- 1/3 c. Parmesan cheese
- 1/2 tsp. pepper
- 1 pkg. linguine, cooked
Method
- Place milk, broth and spinach in food processor. Blend until well mixed and smooth.
- Saute garlic and onion in butter in skillet 2 to 3 minutes. Add spinach mixture. Cook over low heat 5 minutes, stirring occasionally. Add cheese and pepper, stirring until thickened.
- Pour spinach mixture over linguine and mix. Makes 6 servings.
