Ingredients
- 1 large yellow squash (sliced)
- 1 large zucchini squash (sliced)
- 3 medium potatoes (peeled)
- 1/2 medium onion (sliced)
- 1 c. cornmeal
- 1 c. flour
Method
- Slice all squash, peel potatoes and onion.
- Mix thoroughly in a bowl and cover with water.
- In a Ziploc bag combine cornmeal and flour.
- Add one handful of vegetable mixture to Ziploc bag at a time.
- Shake to coat.
- Pan fry until golden brown and potatoes are cooked.
