Ingredients

  • 1/2 c. chopped onion
  • 1/4 c. chopped celery
  • 1 clove garlic
  • 4 Tbsp. oil
  • 1 (6 oz.) can tomato paste
  • 2 1/2 c. water
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. basil or oregano
  • 1/4 tsp. sugar
  • 2 c. macaroni shells
  • 1 lb. cottage cheese
  • Mozzarella cheese

Method

  • Saute onion and celery in oil until soft.
  • Add tomato paste mixed with water and seasonings.
  • Bring to a boil.
  • Simmer 1 hour. Cook macaroni and drain.
  • Mix cottage cheese, macaroni and sauce in large casserole dish.
  • Top with Mozzarella cheese.
  • Bake at 300° for 30 minutes or until the cheese is all melted.
