Ingredients
- 6 T. Butter
- 1 medium onion, sliced
- 2 green peppers, sliced thin
- 1 lb. ground beef
- 1.5 t salt
- .25 t. pepper
- 2 eggs, beaten
- 2 c. corn, drained
- 4 medium tomatoes, sliced
- .5 cup bread crumbs
Method
- Melt 4 T. butter in skillet. Saute onion and green pepper for 5 min.
- Add beef, salt, and pepper, cook for 5 min stirring constantly. Remove from heat, and let stand for 5 min. Add eggs.
- In a 1.5 qt. casserole, spread half the corn, half the meat, then half the tomatoes. Repeat. Sprinkle with bread crumbs, and dot with remaining butter. Bake at 375 degrees for 1 hour.
