Ingredients

  • 6 T. Butter
  • 1 medium onion, sliced
  • 2 green peppers, sliced thin
  • 1 lb. ground beef
  • 1.5 t salt
  • .25 t. pepper
  • 2 eggs, beaten
  • 2 c. corn, drained
  • 4 medium tomatoes, sliced
  • .5 cup bread crumbs

Method

  • Melt 4 T. butter in skillet. Saute onion and green pepper for 5 min.
  • Add beef, salt, and pepper, cook for 5 min stirring constantly. Remove from heat, and let stand for 5 min. Add eggs.
  • In a 1.5 qt. casserole, spread half the corn, half the meat, then half the tomatoes. Repeat. Sprinkle with bread crumbs, and dot with remaining butter. Bake at 375 degrees for 1 hour.
