Ingredients

  • 1 can (20 oz.) pineapple chunks
  • 1/2 c. sugar
  • 3 Tbsp. all-purpose flour
  • 1/4 c. margarine, melted
  • 1 1/2 c. (6 oz.) shredded Cheddar cheese, divided
  • 2/3 c. coarsely crushed saltines

Method

  • Drain pineapple, reserving 1/4 cup juice; set aside.
  • In medium bowl, combine sugar and flour.
  • Add butter or margarine and 1 cup cheese.
  • Mix well.
  • Gently stir in pineapple.
  • Pour into a greased 1 1/2-quart baking dish.
  • Sprinkle crushed crackers on top; drizzle with reserved juice.
  • Bake, uncovered, at 350° for 30 to 35 minutes.
  • Remove and sprinkle with remaining cheese.
  • Yields 6 servings.
