Ingredients
- 1 can (20 oz.) pineapple chunks
- 1/2 c. sugar
- 3 Tbsp. all-purpose flour
- 1/4 c. margarine, melted
- 1 1/2 c. (6 oz.) shredded Cheddar cheese, divided
- 2/3 c. coarsely crushed saltines
Method
- Drain pineapple, reserving 1/4 cup juice; set aside.
- In medium bowl, combine sugar and flour.
- Add butter or margarine and 1 cup cheese.
- Mix well.
- Gently stir in pineapple.
- Pour into a greased 1 1/2-quart baking dish.
- Sprinkle crushed crackers on top; drizzle with reserved juice.
- Bake, uncovered, at 350° for 30 to 35 minutes.
- Remove and sprinkle with remaining cheese.
- Yields 6 servings.
