- 6 c. water
- 1 lb. dried black-eyed peas
- 1 c. turkey ham, diced (8 oz.)
- 1 c. celery, chopped
- 1 large onion, chopped
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 1/2 tsp. cayenne pepper
- 1/2 tsp. black pepper
- 4 c. cooked rice (without salt or fat)
- 1 (6 oz.) can tomato paste
Method
- Place water, peas, ham, celery, onion, garlic powder, chili powder, cayenne and black pepper in large deep cooking pot. Cover and simmer about 1 hour and 30 minutes or until peas are tender. Add more water as needed. Stir in rice and tomato paste. Cover. Let stand to heat thoroughly before serving. Makes 8 servings.
