Ingredients

  • 3 Tbsp. butter
  • 2 (3/4 to 1 lb.) pork tenderloins
  • salt and pepper to taste
  • 1/2 c. apple or currant jelly
  • 1/2 c. vermouth
  • 1/4 c. Dijon mustard

Method

  • In a large skillet, melt butter and saute pork until lightly brown on all sides (about 5 to 6 minutes).
  • Place in baking pan. In a small saucepan, combine jelly, vermouth and mustard.
  • Cook over medium heat until smooth, stirring constantly.
  • Pour 3/4 of mixture over pork.
  • (I save a little for serving purposes.)
  • Bake in
  • preheated 325° oven for 60 to 70 minutes.
  • Baste every 15 minutes.
  • Cut into 1 1/2-inch slices and spoon sauce over meat.
