Ingredients
- 3 Tbsp. butter
- 2 (3/4 to 1 lb.) pork tenderloins
- salt and pepper to taste
- 1/2 c. apple or currant jelly
- 1/2 c. vermouth
- 1/4 c. Dijon mustard
Method
- In a large skillet, melt butter and saute pork until lightly brown on all sides (about 5 to 6 minutes).
- Place in baking pan. In a small saucepan, combine jelly, vermouth and mustard.
- Cook over medium heat until smooth, stirring constantly.
- Pour 3/4 of mixture over pork.
- (I save a little for serving purposes.)
- Bake in
- preheated 325° oven for 60 to 70 minutes.
- Baste every 15 minutes.
- Cut into 1 1/2-inch slices and spoon sauce over meat.
