Ingredients

  • 3 c. plain flour
  • 2 c. sugar
  • 1 c. cooking oil
  • 4 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 c. buttermilk
  • 1 c. black walnuts
  • 1 c. flaked coconut
  • 2 tsp. coconut extract

Method

  • Combine sugar, oil and eggs; beat well.
  • Combine dry ingredients and add to sugar mixture alternately with buttermilk. Roll nuts in flour.
  • Stir in nuts, coconut and extract.
  • Grease and flour a tube pan.
  • Bake 1 hour and 20 minutes at 325°.
  • Pour hot coconut syrup over warm cake.
  • Allow cake to remain in pan for 4 hours.
