- 3 c. plain flour
- 2 c. sugar
- 1 c. cooking oil
- 4 eggs, beaten
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 c. buttermilk
- 1 c. black walnuts
- 1 c. flaked coconut
- 2 tsp. coconut extract
Method
- Combine sugar, oil and eggs; beat well.
- Combine dry ingredients and add to sugar mixture alternately with buttermilk. Roll nuts in flour.
- Stir in nuts, coconut and extract.
- Grease and flour a tube pan.
- Bake 1 hour and 20 minutes at 325°.
- Pour hot coconut syrup over warm cake.
- Allow cake to remain in pan for 4 hours.
