Ingredients

  • 6 slices bacon
  • 1/2 c. sliced celery
  • 2 Tbsp. sugar
  • dash of pepper
  • 6 c. sliced, cooked red potatoes, with skins
  • 1/2 c. chopped onion
  • 2 Tbsp. flour
  • 1 1/2 tsp. celery seed
  • 1/2 c. vinegar
  • 1 c. water

Method

  • Fry bacon until crisp. Drain and crumble. Reserve 1/4 cup bacon drippings. Saute onion and celery in drippings until tender. Blend in flour, sugar, salt, celery seed and pepper.
  • Add vinegar and water.
  • Bring to a boil, stirring constantly. Boil 1 minute. Stir in bacon and potatoes.
  • Serve immediately.
