Ingredients
- 6 slices bacon
- 1/2 c. sliced celery
- 2 Tbsp. sugar
- dash of pepper
- 6 c. sliced, cooked red potatoes, with skins
- 1/2 c. chopped onion
- 2 Tbsp. flour
- 1 1/2 tsp. celery seed
- 1/2 c. vinegar
- 1 c. water
Method
- Fry bacon until crisp. Drain and crumble. Reserve 1/4 cup bacon drippings. Saute onion and celery in drippings until tender. Blend in flour, sugar, salt, celery seed and pepper.
- Add vinegar and water.
- Bring to a boil, stirring constantly. Boil 1 minute. Stir in bacon and potatoes.
- Serve immediately.
