- 4 whole chicken breasts, cooked and diced
- 1 1/2 c. finely diced celery
- 3 hard-boiled eggs, mashed
- 1 c. mayonnaise
- 1 c. sour cream
- 1 tsp. diced onion
- 1 can water chestnuts, drained and diced
- 1/2 c. slivered almonds
- 1/2 c. cream of mushroom soup
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. lemon juice
- 1 (4 oz.) can mushrooms, drained and diced
- 1 c. Cheddar cheese, grated
- 2 cans onion rings
Method
- Mix all ingredients except cheese and onion rings.
- Place in a 13 x 9 x 2-inch baking pan.
- Top with cheese.
- Bake in 350° oven for 30 minutes.
- Remove from oven and sprinkle on the onion rings and bake for 10 minutes more.
- Let stand 10 minutes before serving.
- This serves 10 people.
