Ingredients

  • 4 whole chicken breasts, cooked and diced
  • 1 1/2 c. finely diced celery
  • 3 hard-boiled eggs, mashed
  • 1 c. mayonnaise
  • 1 c. sour cream
  • 1 tsp. diced onion
  • 1 can water chestnuts, drained and diced
  • 1/2 c. slivered almonds
  • 1/2 c. cream of mushroom soup
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 tsp. lemon juice
  • 1 (4 oz.) can mushrooms, drained and diced
  • 1 c. Cheddar cheese, grated
  • 2 cans onion rings

Method

  • Mix all ingredients except cheese and onion rings.
  • Place in a 13 x 9 x 2-inch baking pan.
  • Top with cheese.
  • Bake in 350° oven for 30 minutes.
  • Remove from oven and sprinkle on the onion rings and bake for 10 minutes more.
  • Let stand 10 minutes before serving.
  • This serves 10 people.
