Ingredients

  • 3 cans artichoke hearts in water
  • 1 c. mayonnaise (fat-free is fine)
  • 1/8 c. grated Parmesan cheese
  • 1/2 c. margarine or butter, melted
  • 1 1/4 c. seasoned bread crumbs
  • 1 box Carr's water crackers

Method

  • Drain the artichoke hearts very well.
  • Cut them up into small pieces with a knife and place in a mixing bowl.
  • Add the mayonnaise and 2 teaspoons of the Parmesan cheese plus 4 tablespoons of the bread crumbs.
  • Mix well together.
  • Place this artichoke mixture into a medium size casserole dish.
  • Mix melted butter and bread crumbs; sprinkle over artichoke mixture.
  • Bake 15 minutes at 375°.
  • Serve with crackers.
