Ingredients
- 3 cans artichoke hearts in water
- 1 c. mayonnaise (fat-free is fine)
- 1/8 c. grated Parmesan cheese
- 1/2 c. margarine or butter, melted
- 1 1/4 c. seasoned bread crumbs
- 1 box Carr's water crackers
Method
- Drain the artichoke hearts very well.
- Cut them up into small pieces with a knife and place in a mixing bowl.
- Add the mayonnaise and 2 teaspoons of the Parmesan cheese plus 4 tablespoons of the bread crumbs.
- Mix well together.
- Place this artichoke mixture into a medium size casserole dish.
- Mix melted butter and bread crumbs; sprinkle over artichoke mixture.
- Bake 15 minutes at 375°.
- Serve with crackers.
