Ingredients

  • 1 c. dry black-eyed peas
  • 6 slices bacon
  • 3/4 c. chopped onion
  • 1 clove garlic, minced
  • 1 c. regular rice
  • 2 tsp. salt

Method

  • Rinse
  • peas
  • and
  • combine
  • with
  • cups water in large saucepan;
  • bring
  • to boil. Boil for 2 minutes and remove from heat letting stand for 1 hour.
  • Drain, reserving 6 cups of the cooking
  • liquid.
  • In
  • heavy
  • 3-quart
  • saucepan, cook bacon, onion
  • and garlic until bacon is crisp and onion is tender but not brown.
  • Remove bacon and drain on paper towel.
  • Set aside while stirring peas into mixture in saucepan.
  • Bring to boil, cover
  • and reduce heat.
  • Simmer 1 hour, stirring occasionally. Stir in crumbled bacon.
  • Serve immediately.
