Ingredients
- 1 c. dry black-eyed peas
- 6 slices bacon
- 3/4 c. chopped onion
- 1 clove garlic, minced
- 1 c. regular rice
- 2 tsp. salt
Method
- Rinse
- peas
- and
- combine
- with
- cups water in large saucepan;
- bring
- to boil. Boil for 2 minutes and remove from heat letting stand for 1 hour.
- Drain, reserving 6 cups of the cooking
- liquid.
- In
- heavy
- 3-quart
- saucepan, cook bacon, onion
- and garlic until bacon is crisp and onion is tender but not brown.
- Remove bacon and drain on paper towel.
- Set aside while stirring peas into mixture in saucepan.
- Bring to boil, cover
- and reduce heat.
- Simmer 1 hour, stirring occasionally. Stir in crumbled bacon.
- Serve immediately.
