- 1/2 stick margarine
- 1/2 c. Crisco
- 2 c. white sugar
- 5 egg yolks
- 2 c. plain flour
- 1 tsp. soda
- 1 c. buttermilk
- 1 tsp. vanilla extract
- 1 small can Angel Flake coconut
- 1 c. chopped pecans
- 5 egg whites, beaten stiff
Method
- Cream margarine and shortening; add sugar and beat until smooth.
- Add yolks; beat well.
- Combine flour and soda and add to batter alternately with buttermilk; stir in vanilla.
- Add coconut and nuts.
- Fold in stiffly beaten whites.
- Pour into three greased and floured pans or long sheet pan; makes large cake.
- Bake at 350° until done; cool and frost with Cream Cheese Frosting.
