Ingredients

  • 1/2 stick margarine
  • 1/2 c. Crisco
  • 2 c. white sugar
  • 5 egg yolks
  • 2 c. plain flour
  • 1 tsp. soda
  • 1 c. buttermilk
  • 1 tsp. vanilla extract
  • 1 small can Angel Flake coconut
  • 1 c. chopped pecans
  • 5 egg whites, beaten stiff

Method

  • Cream margarine and shortening; add sugar and beat until smooth.
  • Add yolks; beat well.
  • Combine flour and soda and add to batter alternately with buttermilk; stir in vanilla.
  • Add coconut and nuts.
  • Fold in stiffly beaten whites.
  • Pour into three greased and floured pans or long sheet pan; makes large cake.
  • Bake at 350° until done; cool and frost with Cream Cheese Frosting.
