Ingredients
- 4 Tomatoes
- 1 cup Parmesan cheese
- 1/4 cup Mortadella or Bologna
- 1/2 cup Diced pitted green or black olives
- 4 tbsp Olive oil
- 1 additional olive oil for serving
- 1 additional parmesan for serving.
- 1/4 cup cooked crumbled sausage, I use a combination of hot & mild Italian sausage. Be sure to remove the skin casing before cooking.
Method
- Turn broiler to highest setting.
- Cut open tops of tomatoes, scoop out innards, set aside.
- In a blender or food processor, combine meats, olives, and cheeses.
- Lightly pulse until well combined.
- Fill tomatoes ensuring to over stuff, and pile remaining filing on top.
- Drizzle with olive oil
- Put under broiler for 10-12 minutes
- Drizzle with additional olive oil, as desired
- Top with a light sprinkle of shredded parmesan cheese
