Ingredients

  • 4 Tomatoes
  • 1 cup Parmesan cheese
  • 1/4 cup Mortadella or Bologna
  • 1/2 cup Diced pitted green or black olives
  • 4 tbsp Olive oil
  • 1 additional olive oil for serving
  • 1 additional parmesan for serving.
  • 1/4 cup cooked crumbled sausage, I use a combination of hot & mild Italian sausage. Be sure to remove the skin casing before cooking.

Method

  • Turn broiler to highest setting.
  • Cut open tops of tomatoes, scoop out innards, set aside.
  • In a blender or food processor, combine meats, olives, and cheeses.
  • Lightly pulse until well combined.
  • Fill tomatoes ensuring to over stuff, and pile remaining filing on top.
  • Drizzle with olive oil
  • Put under broiler for 10-12 minutes
  • Drizzle with additional olive oil, as desired
  • Top with a light sprinkle of shredded parmesan cheese
