Ingredients

  • 10 to 12 lb. ham
  • 3 Tbsp. Dijon mustard
  • 1/4 c. honey
  • 1 tsp. cinnamon
  • 1 1/2 c. apple juice
  • 1 c. brown sugar
  • whole cloves

Method

  • Using sharp knife, remove layer of skin from ham, leaving a thin layer of fat to keep meat moist and juicy while baking.
  • Score surface of the ham in a diamond pattern without cutting into meat. Place a whole clove in the center of diamonds.
  • Baste ham with mustard and place in roasting pan.
  • Combine sugar, honey and cinnamon; heat over low to medium heat for 2 minutes until mixture is pourable, but not thin.
  • Spread over ham; pour juice in bottom of pan.
  • Bake at 325° for 1 1/2 hours.
  • Baste every half hour using juice in pan.
