Ingredients
- 10 to 12 lb. ham
- 3 Tbsp. Dijon mustard
- 1/4 c. honey
- 1 tsp. cinnamon
- 1 1/2 c. apple juice
- 1 c. brown sugar
- whole cloves
Method
- Using sharp knife, remove layer of skin from ham, leaving a thin layer of fat to keep meat moist and juicy while baking.
- Score surface of the ham in a diamond pattern without cutting into meat. Place a whole clove in the center of diamonds.
- Baste ham with mustard and place in roasting pan.
- Combine sugar, honey and cinnamon; heat over low to medium heat for 2 minutes until mixture is pourable, but not thin.
- Spread over ham; pour juice in bottom of pan.
- Bake at 325° for 1 1/2 hours.
- Baste every half hour using juice in pan.
