Ingredients

  • 3 cans white hominy, drained
  • 1 lb. grated Cheddar cheese
  • 1 can mushroom soup
  • 1 can cream of asparagus soup
  • 1 (4 oz.) jar chopped pimentos
  • 1 or 2 jalapenos, chopped to taste (may be omitted)

Method

  • Place drained hominy in a large, greased baking dish.
  • Mix soups, pimentos and peppers.
  • Mix part of cheese into mixture. Mix all together.
  • Put remaining cheese on top.
  • Cover with foil and bake at 350° for 30 to 40 minutes.
  • Serves about 20.
