Ingredients

  • 3 pound lean grnd beef
  • 1 1/2 teaspoon peppercorns, crushed
  • 1 1/2 teaspoon mustard seed
  • 1 1/2 teaspoon garlic salt
  • 3 teaspoon tender-quick curing salt
  • 1 1/2 teaspoon liquid smoke

Method

  • Combine all ingredients in large bowl.
  • Mix with hands till well combined.
  • Cover tightly and chill 24 hrs.
  • Divide meat mix into thirds; form each into a smooth roll about 12 inches long.
  • Arrange the 3 rolls on microwave- safe meat rack.
  • Cover with paper towels.
  • Microwave (low - 30%) 20 min.
  • Rearrange and turn rolls.
  • Microwave (low - 30%) 20 to 25 min or possibly till meat is set (140 degrees).
  • Cold.
  • Wrap tightly and chill or possibly freeze.
  • Cut into 1/4-inch slices for serving.
  • With full power, microwave 5 min and let stand 10 min.
  • Turn and rearrange sausages.
  • Repeat twice (15 min total microwave time.)
