Ingredients

  • FOR THE GELATO:
  • 3 whole Egg Yolks
  • 3-5/8 ounces, weight Sugar
  • 7 ounces, weight Fresh Cream
  • 1/2 pounds, 2-5/8 ounces, weight Latte (milk)
  • 1 Tablespoon Vanilla Extract

  • FOR THE BLUEBERRY SAUCE:
  • 1/2 pounds, 7/8 ounces, weight Fresh Blueberries
  • 3-5/8 ounces, weight Sugar
  • 1 Tablespoon Lemon Juice
  • Salt

Method

  • 1. Beat egg yolks and sugar with an electric mixer until well blended and light in color.
  • 2. Boil fresh cream and milk and add egg mixture and vanilla extract over slow heat.
  • 3. Let it cool, then put it in the refrigerator for 5 hours and every 1 hour, beat with an electric mixer (or use an ice cream machine).
  • 4. Serve with blueberry sauce.
  • To make the blueberry sauce, mix all the sauce ingredients and boil until mixed well, around 1 hour.
