Ingredients

  • 2 large raw potatoes (about 1 lb.)
  • 1 Tbsp. grated onion
  • 2 eggs, beaten
  • 2 Tbsp. flour
  • 1 1/2 tsp. salt
  • pinch of pepper
  • melted fat or salad oil

Method

  • Wash and pare raw potatoes, then grate them on fine grater. Quickly stir in onion, eggs, flour and seasonings.
  • Drop from a tablespoon into 1/4-inch hot fat or salad oil in skillet, spreading each cake with the back of a spoon until it is thin.
  • Saute to a deep, golden brown on both sides.
  • Drain on paper toweling laid in baking pan.
  • Makes 8 to 10 pancakes.
