Ingredients
- 2 large raw potatoes (about 1 lb.)
- 1 Tbsp. grated onion
- 2 eggs, beaten
- 2 Tbsp. flour
- 1 1/2 tsp. salt
- pinch of pepper
- melted fat or salad oil
Method
- Wash and pare raw potatoes, then grate them on fine grater. Quickly stir in onion, eggs, flour and seasonings.
- Drop from a tablespoon into 1/4-inch hot fat or salad oil in skillet, spreading each cake with the back of a spoon until it is thin.
- Saute to a deep, golden brown on both sides.
- Drain on paper toweling laid in baking pan.
- Makes 8 to 10 pancakes.
