Ingredients

  • 2 ripe avocados
  • 1 1/2 Tbsp. lemon juice
  • 2 cloves garlic
  • 1 tsp. basil
  • 1/4 c. red pepper, finely diced
  • 2 Tbsp. salsa
  • 1 1/2 Tbsp. slivered almonds, coarsely chopped
  • 2 Tbsp. green onion, thinly sliced
  • 1/2 tsp. salt
  • 1 Tbsp. minced cilantro
  • 1 dollop sour cream

Method

  • Peel and mash 1 avocado.
  • Mix with lemon juice, cilantro, garlic, basil and salt.
  • Dice remaining avocado and fold into mixture with red pepper, salsa, green onion and chopped almonds. Garnish with sour cream.
  • Serve with tortilla chips and fresh vegetables.
  • Makes 2 1/2 cups.
