Ingredients

  • 1 lb. butter, softened
  • 1 1/2 lb. flour (3 c. plain)
  • 6 eggs, separated
  • 2 Tbsp. cinnamon
  • 1 lb. dates, chopped
  • 1 1/4 lb. brown sugar
  • 1/2 tsp. baking soda
  • 1 lb. English walnuts
  • 1 Tbsp. vanilla extract
  • juice of 1 lemon

Method

  • Cream butter and sugar.
  • Add egg yolks well beaten.
  • Sift flour with cinnamon twice, then add to creamed mixture.
  • Dissolve baking soda in lemon juice and add to mixture.
  • Beat well.
  • Fold in stiffly beaten egg whites.
  • Stir in walnuts, dates and vanilla. Bake in a wax paper lined tube pan at 250° for 2 1/2 to 3 hours or until baked through.
