Ingredients
- 1 lb. butter, softened
- 1 1/2 lb. flour (3 c. plain)
- 6 eggs, separated
- 2 Tbsp. cinnamon
- 1 lb. dates, chopped
- 1 1/4 lb. brown sugar
- 1/2 tsp. baking soda
- 1 lb. English walnuts
- 1 Tbsp. vanilla extract
- juice of 1 lemon
Method
- Cream butter and sugar.
- Add egg yolks well beaten.
- Sift flour with cinnamon twice, then add to creamed mixture.
- Dissolve baking soda in lemon juice and add to mixture.
- Beat well.
- Fold in stiffly beaten egg whites.
- Stir in walnuts, dates and vanilla. Bake in a wax paper lined tube pan at 250° for 2 1/2 to 3 hours or until baked through.
