Ingredients

  • 1 onion medium, diced
  • 2 cloves garlic minced
  • 280 grams mushrooms chopped
  • 1 cup green lentils or brown
  • 1 cube vegetable stock
  • 1 cup vegetable broth
  • 1/2 cup tomato sauce
  • 3 tablespoons chipotle sauce
  • 1 can peas
  • 1 can carrots
  • 1 can corn
  • 2 tablespoons dried thyme
  • 3 tablespoons cayenne pepper
  • 1 teaspoon cumin
  • salt
  • 3 pounds potatoes
  • 5 tablespoons vegan butter
  • 1 cup unsweetened almond milk or other non-dairy milk
  • 5 tablespoons garlic powder
  • 1 tablespoon olive oil
  • nutritional yeast optional, or vegan cheese

Method

  • Peel and chop up potatoes. Bring a pot of water to boil and add potatoes. Leave potatoes in pot of boiling water until soft enough for mashing (~15 minutes)
  • While the potatoes are boiling start working on the mince. Add olive oil to a pot along with onions and garlic. Stir well.
  • Add in mushrooms and stir until onions start to become translucent.
  • Add lentils, veggie cube, veggie broth, tomato sauce, and chipotle sauce. Stir for 3 minutes,
  • Add peas, carrots, and corn and stir for 5-7 minutes. The veggie broth should begin to be soaked up and the mince mix should be getting thicker.
  • Add in the thyme, cayenne, and cumin and simmer for 20 minutes, stirring occasionally. Remember to taste test! Add salt and pepper if needed.
  • While the mince is simmering, drain the pot of potatoes and begin to mash. When its mashed halfway, add in the milk and butter. Now mash thoroughly.
  • Add in the garlic powder to the mashed potatoes and mash or stir a bit until the garlic flavouring is spread well throughout. Add salt and pepper to taste.
  • Preheat the oven to 200 degrees C.
  • Take out a casserole or oven-friendly dish and place the mince inside evenly. Add in the mash on top and spread evenly. Sprinkle nutritional yeast or vegan cheese on top.
  • Place the dish in the oven for around 15 minutes. Everything is pretty much cooked we just want to brown off the potatoes.
  • Take out of oven, let cool for a bit, and enjoy!
