- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 1 cup water
- 12 cup butter (melted)
- 12 cup applesauce
- 2 cups all-purpose flour
- 1 cup wheat flour
- 12 cup oats
- 12 teaspoon salt
- 12 cup sugar
- 12 cup brown sugar (packed)
- 2 teaspoons baking soda
- 12 teaspoon baking powder
- 2 teaspoons cinnamon
- 12 teaspoon nutmeg
- 12 teaspoon ginger
Method
- Blend pumpkin, water, eggs, butter and applesauce.
- Mix remaining ingredients together .
- Add dry ingredients to pumpkin mixture until just mixed.
- (Do not over mix or use handed mixer.
- This will produce dry muffins.
- ).
- Fill greased muffin tins.
- Bake at 350 for 25-30 minutes or until toothpick comes out clean.
