Ingredients

  • 1 (15 ounce) can pumpkin puree
  • 4 eggs
  • 1 cup water
  • 12 cup butter (melted)
  • 12 cup applesauce
  • 2 cups all-purpose flour
  • 1 cup wheat flour
  • 12 cup oats
  • 12 teaspoon salt
  • 12 cup sugar
  • 12 cup brown sugar (packed)
  • 2 teaspoons baking soda
  • 12 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 12 teaspoon nutmeg
  • 12 teaspoon ginger

Method

  • Blend pumpkin, water, eggs, butter and applesauce.
  • Mix remaining ingredients together .
  • Add dry ingredients to pumpkin mixture until just mixed.
  • (Do not over mix or use handed mixer.
  • This will produce dry muffins.

  • Fill greased muffin tins.
  • Bake at 350 for 25-30 minutes or until toothpick comes out clean.
