Ingredients

  • 3 c. all-purpose flour
  • 3/4 tsp. salt
  • 1 tsp. baking soda
  • 2 c. sugar
  • 1 tsp. ground cinnamon
  • 1 c. chopped walnuts
  • 3 eggs, beaten
  • 1 c. vegetable oil
  • 2 c. shredded zucchini
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 tsp. vanilla

Method

  • Combine flour, salt, soda, sugar and cinnamon; stir in pecans. In a separate bowl, combine remaining ingredients.
  • Add flour mixture, stirring just enough to moisten dry ingredients.
  • Spoon batter into greased and floured loaf pans.
  • Bake at 350° for 1 hour and 10 minutes, or until a wooden pick inserted in center comes out clean.
  • Cool in pans 10 minutes; remove from pans and let cool on wire racks.
  • Mashed bananas may be substituted for zucchini to make delicious Banana Nut Bread.
