Ingredients
- 1/3 c. unsweetened pineapple juice
- 1/3 c. chicken stock
- 2 cloves garlic
- 1/3 c. low-sodium soy sauce
- 1 Tbsp. dried parsley
- dash of pepper
- 4 chicken breasts, skinned, deboned and split lengthwise
Method
- Mix pineapple juice, soy sauce, chicken stock, garlic, parsley and pepper.
- Marinate chicken breasts 3 to 4 hours or overnight. Grill chicken breasts.
- Makes 4 servings.
