Ingredients
- 2 (10 oz.) pkg. frozen chopped spinach, thawed
- 2 lb. chicken pieces
- 1 (10 oz.) can cream of chicken soup
- 1 (12 oz.) can coconut milk (found in liquor section)
- 1 tsp. onion flakes
- 1 tsp. sugar
- salt to taste
Method
- Spread spinach in baking dish.
- Rinse chicken and pat dry. Arrange over spinach.
- Combine soup, coconut milk, onion flakes, sugar and salt in bowl; mix well.
- Spoon over chicken; do not mix. Bake at 375° for 1 1/2 hours.
- May thicken with cornstarch, if desired.
