Ingredients

  • 1 12 lbs potatoes, shredded (4 medium)
  • 2 tablespoons finely chopped onions
  • 12 teaspoon salt
  • 18 teaspoon pepper
  • 2 tablespoons margarine
  • 2 tablespoons vegetable oil

Method

  • Prepare and boil potatoes (shred enough to measure 4 cups).
  • Toss potatoes, onions, salt and pepper.
  • Heat margarine and oil in 10-inch skillet until margarine is melted.
  • Pack potato mixture firmly in skillet, leave space around edge.
  • Cook low until brown, 10-15 minutes.
  • Cut potato mixture into fourths turn.
  • Add 1 tablespoon vegetable oil (optional).
  • Cook until bottom browns, 12-15 minutes longer.
