Ingredients
- 1 12 lbs potatoes, shredded (4 medium)
- 2 tablespoons finely chopped onions
- 12 teaspoon salt
- 18 teaspoon pepper
- 2 tablespoons margarine
- 2 tablespoons vegetable oil
Method
- Prepare and boil potatoes (shred enough to measure 4 cups).
- Toss potatoes, onions, salt and pepper.
- Heat margarine and oil in 10-inch skillet until margarine is melted.
- Pack potato mixture firmly in skillet, leave space around edge.
- Cook low until brown, 10-15 minutes.
- Cut potato mixture into fourths turn.
- Add 1 tablespoon vegetable oil (optional).
- Cook until bottom browns, 12-15 minutes longer.
